“These Sticks Were Made For Dippin”- Baked Panko Zucchini Sticks
This weekend I was rummaging through the fridge playing trash or treasure (which is where we go through the food in the fridge and say whether we are keeping it or dumping it). I stumbled across two lonely zucchini’s and started creating recipes in my head. I decided to go with a favorite of my Grandma Rita’s – zucchini sticks, the healthy way though.
What You Need:
2 Zucchini (sliced into sticks)
1 Egg
1 Egg White
1-1½ cup Italian Flavored Panko Bread Crumbs
2 Tbsp Grated Romano Cheese
2 Tbsp Grated Asiago Cheese

Set oven to 450 degrees convection.
In a      small bowl whisk together egg and egg white. Then, in a separate shallow      bowl or plate, dump breadcrumbs and cheeses. Stir together to combine.
Next,      spray PAM onto a cookie sheet.
Dip      zucchini sticks into the egg mixture, then into the breadcrumb mixture      (it’s best if you use one hand for the wet ingredients and one hand for      the dry). Be sure to coat zucchini sticks as best you can. Place coated      zucchini’s onto the greased cookie sheet.
Place      tray in oven for about 10-12 minutes. Keep an eye on the zucchini because      every oven is different.
*Serve with fresh squeezed lemon, marinara sauce, or goat cheese pesto for dipping.
